  • Carrot Cake Oatmeal – I grated a whole carrot into this baby. To be honest I kind of forget what I put in here but I’m fairly sure it involved oats, cinnamon, almond milk, a splash of gingerbread syrup, almond slices and shredded carrot. It was topped with some kind of yogurt “icing”, which was most likely vanilla yogurt mixed with some nut butter.

  • A bizarro breakfast – tempeh, carrots, orange, eng muffin with cottage cheese… and then some kiwi slices with a spoonful of vanilla yogurt. I guess I was having an indecisive morning.

  • Mediterranean chicken breast, broccoli, buffalo sauce. I finally got Franks Buffalo Sauce since before we were using a more generic brand and it almost ran out. WHOA. I thought buffalo sauce was good before but this stuff is AMAZING. Especially with broccoli. So so good.

  • Then some Canned Butternut Squash. This stuff was on sale. I was pretty excited. I think I like canned pumpkin better though. Mixed with vanilla soy protein powder.

Thursday, February 5th

The day of madness… a chunk of midterms and assignments finally OUT of the way. Only one more week of it to go.068

I’m slightly bummed that I had to rush through all of this and couldn’t get it down in several earlier separate posts throughout the week that weren’t bursting at the seams, but hopefully this week I’ll get back to more regular posts that won’t have to be done in one giant clump.

One positive non-food note… The weather is FINALLY picking up! It’s gorgeous and sunny today and is supposed to be above 0 (celsius) all week. Yesterday it was even raining instead of snowing. Spring Spring Spring!

 

Alright, I guess it’s time to get back to the studying. Thanks for the all of the good luck studying encouragement, and I wish mass amounts of good luck to all of you! Whether you’re studying or not :)

The rest of what I ate on Tuesday was very boring, bland and unphotogenic. I like my foods to look at least somewhat pretty… discovering this array of photos is pretty disappointing! At least it was all tasty though

First encounter with kombucha. Not bad, not bad! Although it’s still got nothing on my buttercup, which I now cannot find in stores and am greatly saddened about.

Wednesday

was a little more interesting.

Well okay, breakfast wasn’t that interesting. I wasn’t incredibly hungry but had an early morning class so I knew I had to eat something.

Coffee and a fruit plate did the trick…

…briefly. But then I got quite hungry just as I was about to head out, so I grabbed a S’mores Luna Bar, ate half, then ate the other half during my second morning class.

I never buy Luna bars but I really don’t mind them that much. This was decently tasty and kept my hunger at bay. Maybe not as good as Clif or Larabar, but I’ll probably pick these up a little more often. There are a few other flavours I’m kind of curious about.

My Wednesdays end at 11:30 which is lovely, but I had the rest of the day set out for studying. Not so fun.

Before sitting down, nose in the books, I wanted to do something with the zucchini abundance we have right now. So I went with the obvious…zucchini bread of course!

I followed this recipe for Chocolate Zucchini Bread from VegWeb but I halved it, made a few substitutions and unveganized it (Sorry! Egg whites were more convenient). I also wasn’t in the mood for a chocolate version so I just made a plain:

Chocolate Chip Zucchini Bread

  • 3/4 cup flour
  • 3/4 cup whole wheat flour
  • 1/2 tbsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup sugar
  • 1/4 cup vegetable oil
  • 1/4 cup unsweetened apple sauce
  • 3 egg whites (*note – I forgot to half this part so it should have been 1.5. I don’t think it hurt it much though)
  • 1/3 cup unsweetened Original Almond Breeze
  • 1 cup shredded zucchini
  • 1/2 cup semisweet chocolate chips
  • 1/3 cup chopped almonds
  • 1/2 tsp vanilla

Combine all dry ingredients, mix. Then add oil and applesauce and stir with a fork. Then add egg whites and mix. Then add milk and mix. Then add vanilla, zucchini, chocolate chips and nuts and mix.

Put all into a loaf pan and bake at 350 for about 55 minutes.

It comes out a teeny bit dry so you may want to play around with oil/applesauce amounts but otherwise I personally thought it was quite delicious.

I munched on a couple teeny slices right before my lunch of a salad with half a can of tuna mixed with fat free sour cream/fat free mayo/dijonnaise. I ate some of it on half an english muffin and the rest on top of the salad.

My last couple days have been seriously uneventful as I try to play catch-up with all of my readings.

I munched on some Fiber One Honey Clusters (free sample box from a little while back) with some Almond Breeze pre-dinner because I thought I was going to try to squeeze in a pre-dinner treadmill sesh, but I realized there just wasn’t enough time so I continued on with some homework instead.

For dinner we had tilapia topped with Mrs. Dash and lemon, frozen spicy fries and salad.

Fish twice in one day. That never happens for me. Strange.
PS my mom threw a lemon onto my plate in the second picture for a pop of colour. I told her to dress up her own plate but I guess it did enhance it a bit.  ;)

Then later last night I went to a friend’s house to help her pack for a weekend trip and we hit up a grocery store, where I bought cottage cheese (!) and rice pudding (!!). I obviously had to break out both as soon as I got home and I forgot just how much I love rice pudding. Omg. It’s delightful. I think I’ll be buying this as a regular treat much more often now.

Now I must go get ready for class!

I’m way behind on blog reading and commenting so I apologize! I’m going to try to catch up asap but unfortunately the school stuff is taking priority right now. This term is slightly killer.

I am on the verge of tears here as I reflect on the realization that the last few hours of holidays are here and tomorrow is back to the grind of schooling all over again.

Okay, not quite on the verge of tears, but hardly far off. I’ve quite enjoyed my holidays but they were much too short lived. I don’t feel rested or ready to get back into the stress all over again. Hopefully it won’t pick up too fast and the first couple weeks will be fairly tame (as they usually seem to be) so as to ease into it.

New terms always make me nervous. It’s that whole unexpected, unknown thing that really gets me. I’m sure it’ll be fine though… breathe…

Saturday

Twas a day of work, as per my every Saturday.

I woke up with a hankering for a smoothie. I remembered that I had this sitting around waiting to be tried, so I figured there was no better time.

I blended it up in my VITAMIX Magic Bullet with half a frozen banana and about a cup of unsweetened Almond Breeze.

It tasted like a melted Fudgesicle… works for me!

I had to balance it out with some hot coffee too though. It is still winter after all.

Work was same old. Breakfast held me over fairly well through til lunch so I only needed to snack on 1/4 of a Clif bar through the morning. This was my first encounter with this flavour. Not bad but probably one of my least favourite so far. For some reason it tasted apple-y to me? I know that makes no sense considering there are no apples in it but I can’t control my bizarre-o taste buds.

For lunch I packed a salad, an apple and leftover tuna Kraft Dinner that I also stirred some homemade spinach dip (from xmas eve… it’s still good!) into for more creaminess. Leftover KD just isn’t the greatest reheated unless it’s got something else stirred in to revive it I find.

Dinner.

Really yummy garlic butter flavoured tilapia fillet with broccoli and leftover hamburger casserole.  The fillets were boxed and pre-flavoured but so good and moist and like butter. My seafood tastes are really expanding. I used to hardly touch any seafood. Then again, I used to be quite the picky eater. Now I’ll eat nearly anything. Well maybe that’s a slight stretch, but there’s no way I could be classified as a picky eater anymore. 033

Saturday night I was supposed to go out with my friend to her work friend’s birthday but apparently she wasn’t getting along that day with several of her work people so we ended up just going out dancing instead. It was pretty fun but I must say, I really hate cab services. They are way too expensive. Do you guys have to pay an arm and a leg for cabs? I’m sure they are pricey no matter where you live but seriously, we need better bus services or something. Or maybe I just need to relocate myself closer to the bars ;)

I woke up and did a bit of blog reading first thing. In the midst of this I saw someone (can’t remember who, sorry!) eating hummus on a wrap and I knew immediately that that was what I wanted. With that, an egg white roasted red pepper hummus wrap was born, complete with spinach and leftover broccoli from last night’s dinner.

Then my mom and I went out for a big grocery haul since we were out of a lot of the essentials.

I hate coming home from grocery shopping because I always have to rip open half of the foods right away and eat them. I did this with fresh bread, cottage cheese, plain yogurt, tofu, grapes and frozen mango.

Then I decided to be more structured so I baked up the whole tofu block. Rubbed with rice vinegar and hoisin sauce and baked to perfection.

Alongside that I also baked up my all-time winter lovebuttercup squash.

I love squash in it’s many forms but nothing beats this baby.

After munching on several pieces of tofu and squash, I decided to plate some of it with a hunk of green pepper.

Then I lazed around and eventually did Tina’s (Not Boring) Treadmill Workout (which Jenn did today too!) I altered it a bit though by doing incline 15 for the 4mph walking parts and incline 4 for the rest. And the last 5 minutes I did running 6.5 at 8-10 incline, then actually cooled down at 4mph 15 incline for 5 minutes to bring the whole workout to 50 minutes. I really like my inclines heh. This workout is definitely worth attempting, it’ll give you a good sweat that’s for sure. 

Dinner was kind of random. My mom made meatloaf (the kind that’s not even remotely healthy) and although I’d prefer not to eat it, it tastes so good that I can’t stop from having a small portion of it. So I paired that with some cottage cheese, salsa, more squash and raw veggies, as well as a few potato wedges.

Then I had a few more bites of meatloaf. I told you I can’t stay away from it.

Then I had many many grapes and an iced coffee.

Then I did some blog reading and whatnot. Then I wanted fruit. So a devoured an apple, more grapes and a mug of tea.

Now it would be in my best interests to head to be since my first class starts tomorrow at 9:30 (sob) but I think I’ll do a little more blog reading first. Going to bed early is not the most appealing idea ever.

As I mentioned in my last post, I spent Friday morning baking up a cake for my brother’s 17th birthday.

This was one mean cake. Huge, dense, heavy, and stomach-expandingly scrumptious. I used the Ultimate Chocolate Cake recipe featured on this site which is a Barefoot Contessa recipe, and I used the fudge icing from here.

I set my laptop up on the kitchen counter, pulled out all of the ingredients, and then Foodbuzz and I got down to some serious baking business.

So I’m clearly no master cake decorator but in my defence, our cake decorating tools and objects are limited, and I left the icing in the fridge for too long so it was too cold and pretty darn hard to spread, even after whipping with an electric mixer for a while. Fortunately the decoration of a cake doesn’t affect its taste.

I will most definitely be using this cake recipe again. It results in a perfect chocolate cake. I think next time though I’ll half it because this cake was GINORMOUS. I practically needed a forklift to move it from the counter to the fridge. It could probably work with any kind of icing but I think next time I would try a slightly less rich icing since the cake is already so rich. Regardless, it was (and still is since there’s still a bunch sitting in the fridge… anyone want some??) darn delicious.

Right before baking it, I started off my morning with a quick bowl of oatmeal made with a Quaker Reduced Sugar Apples and Cinnamon instant oatmeal packet, topped with vanilla yogurt and frozen banana slices.

I didn’t really have much of a lunch, but rather snacked on some icing licks plus some raw veggies, an apple and some cottage cheese throughout the day while running around.

For dinner we went out to Red Lobster as my brother’s place of choice for his birthday meal. I’ve only been there once years ago and it was back in the day where I did not touch seafood except for tuna sandwiches, so I was pretty pumped to try them out.

If you’ve never been before, they provide unlimited biscuits. Hello danger zone. There was no way I was even going to bother resisting these goodies though. I had one and a half.

For my entree I ordered a create your own feast meal where you can pick two or three main dishes from a list of around 15. I picked broiled scallops and garlic shrimp with a side of broccoli.

I also had a few bites of my mom’s shrimp linguine alfredo. It was all super tasty. I don’t order seafood that often at restaurants but I think I should. I have a new appreciation for it. Although I don’t really eat out that much to begin with other than sushi, which I guess is seafood anyway so maybe my last statement is kind of skewed. Whatever. In conclusion, good meal. I brought about half of the shrimp home and finished everything else plus a garden starter salad with balsamic vinaigrette on the side that came with the meal as well.

Breakfast: Bowl of Weetabix and Nature’s Path Optimum Power cereal with almond milk, vanilla yogurt, banana and frozen strawberries. The strawberries were thrown in last minute. Best idea EVER.

Snack: The Dr Weil Banana Manna Pure Fruit & Nut Bar. The first time I tried one of these (the Chia Razz flavour) I wasn’t the biggest fan but this flavour was a nice improvement.

Dinner: was random. Raw veggies, cooked veggies, boxed mac & cheese (gotta love that processed cheese.. mmmmm…) with salsa and a piece of pita with hummus and salsa. Plus some unpictured cake later on. Obviously.

Then I went out with some friends for a bar night… Fun at the time? Yes. Fun once I got home? Not so much. Fun today? Again, not so much. I honestly didn’t even think I drank that much… weird.

I have no idea what time I got home but I think it was probably somewhere around 3am. I don’t think I got to bed for another hour, but it may have been even longer. Somehow I lost one of my hoop earrings too (tear).

Then I woke up at 9:30 this morning? Ugh. I shoved plenty of food into me, mainly consisting of bread-y products like an english muffin, toast, pita, and crackers. Yes, all of the above. Plus some banana and a whole lotta pb. Oh and some cereal straight from the box. Plus plenty of water. None of this helped me as much as I was hoping it would. Then I fell asleep on the couch for about an hour. Then my friend called and woke me from my much needed nap. Then I had to go pick up my car that was parked at my friend’s house. Then I came back home and slept until dinner time.

When I woke up I felt a little better, but still not super. Hungry though. I ate lots of chicken cacciatore which was mainly eating a lot of pasta, plus some broccoli. Then I had yogurt with frozen fruit. Then I had tea. Then later I had an apple and a clementine. Now I feel okay. Still kinda blah though.

And because of my sleeping all day, I didn’t really get much studying done. So the next two days will be filled with plenty of that in prep for my exam Wednesday. Woo…

Hope you all had some super weekends. And particularly a better Sunday than I did…haha.
