It’s amazing how our eating habits change over time, isn’t it? Most of them for the better! Though I do miss that carefree child consumption, guided by nothing more than taste buds and enjoyment. Calories, carbs, nutrients…what were those? All we wanted to do was eat food that tasted good. These days there is so much more thought, so many more stipulations that come along with eating a meal. Better for the body, (arguably) yes, but better for the mind? Not on some (or many) days.

Sometimes I just want to order the darn chicken fingers (with plum sauce!) without a second thought. Or a side salad.

Oh, the food ‘tude…

 

Case in point:

So what do I do? Drink them down anyway. They’re good for me, right? All those greens…

Except then I’m scrounging for more (better tasting) food for the rest of the day.

Don’t get me wrong, I enjoy smoothies and they’re typically what I’ve been craving in the mornings lately. I guess I’m just not into my typical method anymore.

The last of my Green Magma ran out yesterday. Along with the last of my spinach…good riddance?

Taste-wise…okay so it was still pretty meh. Too much tea, not enough almond milk, just watery and flavourless in general. I’m thinking bananas need to be re-introduced to smoothie time.

Handfuls of Kashi Honey Sunshine made things a little brighter though. Who doesn’t like crunchy bite-size tastes of french toast with their breakfast?

Some people like their smoothies with an all milk/almond milk base. I’ve done that in the past and found those too rich in the morning. Then again, it may have been a protein powder I was using in the past that was overkill. Either way, I’ve been going the mostly chilled tea route. I think more almond milk needs to make its way into my beverages.

Since I just discovered that Costco now carries a 6-pack of unsweetened Almond Breeze, this shouldn’t be an issue.

My other meals have been lackluster too.

I’ve been eating a bum ton of vegetables because – it’s hot. And it’s skin-revealing season. Whaddup.

Except that all those less-than-exciting vegetable meals leave me cramming in bread and cereal hour by the hour.

I still LIKE my veggies. Just like I still LIKE my smoothies. But they might need to stop being the main focus of all my meals for a little bit. I rarely leave a meal feeling mentally satisfied lately.

Probably because I’m not doing much of anything to these veggies either. Chop, dress, chomp. Easy but boring. Where’s the creativity in that?

The hot days leave me craving quick, simple and light meals filled with fruits and veggies, but I’m getting bored with my basics. I need to figure out how to spruce them up a bit!

My friend sent out a mass text late last night telling everyone he won a car in Tim Horton’s Roll Up the Rim gig. Everybody’s obsessed with Roll Up the Rim around here so this would be a big deal. I almost fell for it but I was skeptical. Not because it was April 1st (definitely didn’t even realize at that point) but because he’s just the type of person to say something like that to be funny. I demanded a proof pic. This was his Facebook picture today:

The only other prank I experienced today was People Style Watch magazine trying to tell me that Snakeskin is in this Spring. I’m down with my animal print but snakeskin is one trend I highly doubt I’ll be wearing on my body any time soon.

While reading about strange fashion trends this morning, I ate a Julie-fied egg white omelette (egg whites mixed with cinnamon, vanilla, pinch baking powder) stuffed with peanut butter hummus and SF raspberry jam.

So we’re here at Friday already. So we’re here at APRIL already!
This week flew by.
This MONTH flew by.
Heck, this whole SEMESTER flew by, this is the last full week of classes of winter term! I don’t believe it. I do have one last class Monday evening but other than that, dunzo. Well, minus the essay I have due next week (should probably get on that sometime soon…) and the 4 exams spread throughout the month.
But otherwise… Adios Undergrad?!? What?!

 

Aside from finishing up most of my classes, what else went down this week?

A bit of Hair Curling Action.
For those of you interested in how the Sultra curling iron works (just got it for my birthday), here’s what came out of my second hair curling attempt:

It does take some getting used to and I’m still no pro but the whole head of hair took about 10 minutes to do.

Word of advice though if you ever get one for yourself, or any high heat styling tool for that matter– Use as directed & BE Careful.

Aka if they give you a heat glove, use it. Not that that protects forearms…

I got this burn the first time I used it and it is still very much unhealed. That thing is HOT.

Along with unsightly burns, I also suffered a case of pink eye this week. I looked very much not at all like this.

It was much uglier and nastier. Who gets pink eye, seriously? I’ve been putting drops in all week but the whole top half of my eye is still a bit yellow and red. The never-ending pink eye? Or something worse… I don’t know if I want to know.

 

Now that we’ve got that nasty body talk out of the way, no better way to follow it than with some appetizing foods, am I right?

Along with trying out my birthday prezzie curling iron, I also tried out my new peanut flour…by making an Inside-Out Peanut Butter Cup Cake.

If you have access to a bag of peanut flour, you must make this right now. Just do it. I demolished half of this while it was still piping hot from the oven.

And somehow managed to save the rest for later.

And speaking of flours, I also played around with some coconut flour using this gluten and dairy free muffin recipe as a guide.

Except mine were definitely not muffins. Introducing the Coconut Blobs.

1 cup coconut flour
2 T coconut oil, melted
1 T agave nectar
1/2 cup unsweetened applesauce
1/4 tsp baking soda
1/2 tsp cinnamon
2 egg whites
dash sea salt 
Roll into blobs. If you want to be like me, throw them into a muffin tin. Totally unnecessary though. Just a baking sheet would do.
Bake at 350 for ~15 minutes. Make 10-12 blobs.

Coconut flour is really hard to bake with. I think I’m sticking with pancakes for the remainder of the stash.

 

In order to try to fix my messed up eye, this week I’ve been eating my weight in roasted squash, cereal, and hummus.

Oh wait, that was just to fix my appetite.

I hate this cereal. It’s only in my life because my brother likes it so it has to be in the cupboard at all times. I do not like it but somehow my hand finds itself in this box nearly every day. Rude.

What’s the Best April Fools Day prank you’ve ever played or experienced?
I don’t think I’ve ever actually played one. Goal for future years? Oooh yeah.

Would you wear Snakeskin? The fake stuff of course.

Do you LOVE April? Heck yeah Spring. Now if only the rest of the snow would take a hike…

Oh November. I like you but your presence is a little bittersweet. You’re a fresh month, full of new excitements and possibilities…and yet you bring with you more work crammed into 30 days than I dare want to even think about. If October is the month of midterms, November is the month of essays. Not one of my top three that’s for sure.

But I will survive, I will survive, just as long as I know how to write I know I’ll stay alive…

Unfortunately essay writing is not my forte so I’ll be surviving by a thread.

Anybody love essay writing? Better yet, anyone want to write all of mine for me? ;)

Katie’s Triple Chocolate Chunk Muffins really are truly a genius Vitamuffin replacement. I only used a few small packets of Stevia instead of the Splenda so mine were a little bitter but otherwise, definitely making these again.

I was a little deprived of cottage cheese after having gone, what, possibly a week now without? Unacceptable. Picked some up last night at the grocery store.

Yes, the container is already half gone. I need to start buying this stuff in BULK.

I was plenty full after this but was pleasantly reminded by my mother that there were kiwis in the fridge. When is the last time I had a kiwi?!

Well, now it’s ten minutes ago. I ended up only eating half though because I suddenly felt a little nauseous. Too much food to early in the a.m. I guess.

Today is one of my late mornings (class doesn’t start until 11:30!) and I usually try to fit a workout into my plentiful morning time but I’m just not feeling it this morning. I think I’ll do it after class and dinner tonight instead. I feel like lazing around and reading right now instead.

But I missed yesterday because I was actually being productive and getting work done. I’m feeling slightly less stressed now that I’ve gotten some of my readings and assignments underway. I doubt that relief will last long but it’s something.

So…

Yesterday

I had a chocolate Carnation Instant Breakfast drink for, well, breakfast, what else?

One instant breakfast packet, one cup of unsweetened original Almond Breeze, and half a cup of strawberries into the Bullet.

Then two early classes, in one of which I ate a Kashi Cherry Dark Chocolate granola bar since breakfast drinks just don’t seem to hold me over all that well.

Wednesdays are nice and short for me (9:30-11:30, score!) so then I came home, did some internet browsing and such, then made some lunch.

For lunch I ate this, which had been in my cupboard for I don’t even know how long:

Taste-wise it wasn’t bad, but it could have used some more flavour or spice or something. It was a little bland. I threw in some wilted spinach and a dollop of fat free sour cream for good measure.

I also snacked on rye, leftover chicken and raw veggies while waiting for this soup, as it was of the ‘pour in boiling water and wait 5-7 minutes’ variety. I am not a patient person.

Then I re-discovered a few pieces of Jenn’s Betta Banana Bread that I made a while ago in the freezer. Sweeeet. I had a teeny slice sandwiched with banana and soy nut butter

Shortly after, I did this random workout that I jotted down on a piece of paper. It’s pretty similar to most treadmill workouts I do, just varying up the speeds and inclines constantly. I get bored really easily so my favourite treadmill workouts involve switching things up as often as possible.

I wasn’t sure how do-able this one would be but it’s quite do-able. Challenging and yet I was never on the verge of quitting, nor was I ever bored since it switches up every few minutes. Next time maybe I’ll try throwing in a couple sprints or something equally exciting.

Then I went to the grocery store with my mom pre-dinner (where I picked up my beloved cottage cheese), came home, unpacked and put it all away, and proceeded to have a serving of cottage cheese in the process.

We ate dinner soon after, where I threw together a quick egg white omelette stuffed with spinach, tomatoes, chili sauce and salsa, along with a side of velveeta mac and cheese because it’s one of my downfalls.

I was in a snacky/sweet mood last night (I think it was a homework procrastination thing) so I ended up snacking on some mellocremes from Halloween (I know, why do I still have some of those lying around? They were in the freezer), as well as an apple, a few (too many…) semi-sweet chocolate chips and a thing or two that I can’t remember.

Then I did plenty of school work. And now I should do a bit more before heading off to class. Long day today: 11:30-6. I’m not a fan of having classes for that long but there’s a 1h40min break in there so it’s tolerable.
