Over the course of my new working stint so far (which I have still neglected to talk about – sorry about that. One of these days…soon…I hope… However, refer to #1), I have realized a few things:

1. I suck at blogging – Yeah really.
“Oh yeah, I’ll be back to regular blogging soon!”
“Oh yeah, I’ll write this, that, and the other thing about my new work scenario.”
Oh yeah… didn’t happen. I also apparently make false promises. MY BAD.

 

2. I suck at taking pictures of my food. – Yup, I essentially quit doing it. Once upon a time it was a fun hobby. And then everyone and their mother got a food blog, and a fancy schmancy camera with 10 different lenses, and fancy schmancy light box setups for optimal food photo lighting, and customized layouts to make their blogs sparkle and shine…etc etc etc.

And I did none of that. Hello simplicity. Hello tumbling downward into food blog oblivion. Hello not being excitable enough about the whole trend to do much else about it.

(Not knocking all of the stellar fancy schmancy food blogs out there. It’s pure admiration only, dears. I just don’t quite care enough to go that far myself… at least not right now!)

3. I CAN, in fact, become an early morning exercise superstar.Before, I never quite understood how people could drag their buns out of bed and find the energy enough to get a workout in before the sun rose. But it’s all mental, people. Mental and restful. Get a good night’s sleep (aka reduce your bedtime by an hour or two) and convince yourself that you want to work out in the morning (it’s ridiculously nice to have the workout DONE and the evenings completely FREE) and you’ll get the hang of it in no time. Early morning pre-workout coffee helps too.

4. How to make the easiest, fastest poached egg EVER. – I don’t remember where I learned the technique (I’ve read at least 12 internet tutorials for poached eggs over the last year) but here it is:

Take a small ramekin or glass bowl. Fill it halfway with water and add a splash of vinegar. Crack an egg in it and poke the yolk with a fork. Cover the bowl with plastic wrap. Put in the microwave for 45 seconds. Check it, then put it in for another 10-15 seconds. (If I put it in for a minute straight it gets too hard.). Remove from the water with a spoon. Break that egg seal and let the yolky goodness run free.

Voila Breakfast!

5. No amount of green smoothies or citrus fruits can cure my invincible cold. – I’m probably the most hated person at work. I’ve had an undying cough for over two weeks now. I don’t think that’s normal. If I laugh… it immediately turns into a coughing fit. Running… I stop every two minutes to clear out my lungs.

I’m going to try to squeeze myself into the doctor’s tomorrow… by this point I think meds are my only option.

 

6. Baking is one of my favourite pastimes.Okay fine, so I had this realization a long time ago. But it has only been solidified by the fact that now, even though my free time has been reduced, a good chunk of it still goes towards whipping up some of the many (many) recipes bookmarked on my computer.

Guess who got my brother to eat BEANS in his dessert…and LIKE it…Katie did! With her Deep-Dish Cookie Pie – a MUST make (I halved it and used a normal cake pan and it turned out perfectly…and was gone in a day).

 

Well folks, the fact that I actually updated this thing is PROGRESS. And in my opinion, any progress is a good thing. So here’s to progress… and hopes upon hopes for more even better progress to come.
(I do miss this but I also hate my suffering-from-senioritis laptop that I still have yet to upgrade. Goal for the next week or so – Buy a MAC!).

Middle of April, here we are.

And that means… Exam Time!

I wrote my first exam yesterday and have three left to go, taking me right up until the 27th of April. Nice and late this year. I guess, on the positive side, they’re nice and spread out meaning I can study leisurely for each without having to cram. At least that’s the plan anyway.

Since exam time means sporadic updates, it also means this post is going to be…

A Food-Filled Roundup!

Saturday

Pumpkin overnight oats: 1/3 cup oats, 1/2 banana, pumpkin, chocolate Amazing Grass, almond milk and a blob of Greek yogurt.

Work lunch of champs: Flatout wrap with turkey, Laughing Cow, spinach, tomato, pickle, mustard; raw veggies; apple; half a leftover Gatorade (A necessity from a post late-night dancing frenzy, the one time Gatorade really does come in handy).

Another Flatout wrap, this time with a chicken kebob, dijon and buffalo sauce. Sides = cauliflower with vinegar, roasted potatoes, sauteed mushrooms.

Sunday

Another Mocha Green Smoothie (addicting) with Corn Bran cereal to mix in + green tea.

A fully-loaded salad: spinach, cabbage slaw, carrots, mushrooms, tomatoes, pickles, balsamic dressing, feta + a slice of bread with tuna on the side.

Seriously, if you happen to have the first Deceptively Delicious cookbook, I can’t praise the Turkey Burgers enough. I doubled the batch this time around and they were gone in a day. My fam can’t get enough of them. My brother even said he prefers them to most other burgers he’s had. They’ve officially been instated as a “regular rotation” meal.

 

Monday

They’re so good that I even ate one for breakfast the next day. Mostly out of fear that the leftovers would be gone by lunchtime before I had a chance at any.

After making those cauliflower-loaded turkey burgers, there was a bit of cauliflower puree left that I put to good use in another Deceptively Delicious recipe – Carrot Cake Muffins

Alterations: I bumped down the brown sugar and margarine, used carrot baby food, bumped up the cauliflower puree, omitted the orange juice concentrate and used whole wheat pastry flour.

They still got a stamp of approval.
Seriously, cauliflower puree is my new favourite food/baking add-in.

And then we had roasted squash.

Tuesday

Exam Day #1

I was feeling a snack plate for breakfast so I went with it.

1/2 grapefruit, strawberries, squash skin, a chunk of carrot cake muffin, 1/2 a banana, 1/4 toasted cinnamon raisin bagel thin with cheddar.

Random? Yup. Satisfying? Yup.

Lunch/pre-exam writing fuel = spinach, tomato, squash salad with a (much larger than pictured) serving of Cheddar Popchips.

Once in a blue moon we buy the Costco as-big-as-your-torso sized bag of Popchips. That happened again this weekend. It’s Wednesday today and the bag is long gone.

Followed by my first ever experience with Marble Slab. ‘Freshest Ice Cream on Earth’ with flavours like Cheesecake, Birthday Cake, Peanut Butter Banana…(mouth watering yet) + your choice of mix-ins mixed up right in front of you on the ‘slab’.

You bet I found happiness within my birthday cake ice cream with raspberries and Nestle Crunch mix-ins. But I opted for the kiddie size and let me tell you, that is not enough happiness. Next time, go big or go home.

You bet I had a coupon for this one too (this ice cream costs an arm & a leg).

My entire afternoon/evening was full of deals and steals! Fun on a budget is the only way to go. My friend and I were nearly going to hit up the cheap Tuesdays movie night too just to round out our deals and steals day but timing didn’t work out so we rented instead. Which was even cheaper. Score!

 

And to round out this round-up – Today’s Breakfast: a round cinnamon raisin bagel thin, toasted and topped with cream cheese, almond butter, banana and strawberries.

Are you a Deals & Steals Lover?

I’m a mad coupon clipper. Any of those little coupon booklets that come in the mail? I’m all over them. Coupons you can order online? They’re frequently showing up in my mailbox. Local deal sites like Groupon, WagJag, or TeamBuy? I’m subscribed to them all. And don’t even get me started on how excited I get when I find awesome sales at the mall.

You know how you have that essay* (*insert relevant dreaded writing task here) just sitting there waiting to be written but you can’t seem to bring yourself to do it. You want nothing more than to just not do it at all. You will it to write itself…but it doesn’t happen. The one and only option left is to suck it up and do it. But it’s just so unappealing…

 

What to do, what to do…

How do I get through it?

 

Clear out the Google Reader. I took breaks between writing probably every…10 minutes? For the first time in what felt like months I finally managed to get mine to below 100 unread. That only lasted for about a day. But that aside, those little frequent breaks help me stay sane. Sometimes it’s great to just pound as much out as you can all in one go but for those tasks you’re really struggling with (This was the last essay of my undergrad career… I just was not feeling it!), little doses of blog sunshine make it a little less dreary.

Greens, greens, the magical … vegetable. The more you eat the more you’re…stable. The more you’re stable the better you feel, so eat your greens at every meal.

Along with some sanitea, add a hot water bottle into the mix to ensure maximum comfort and warmth while trying to write that darn essay.

Do NOT, however, attempt to let extra air out of the water bottle over top of your lap after you’ve just added the boiling water in mere minutes before. This is likely to result in massive leg burns, some sobbing and being stuck with a bag of frozen peas glued to your leg for the next hour, defeating the purpose of having the hot water bottle to warm you up in the first place.

I also recommend cereal breaksif you have any willpower. If you’re like me and you don’t…burn your cereal boxes! If you think you see a lot of greens up above, they’ve got nothin’ on my cereal intake.

Three Days…I spent sitting on my bum studying this weekend. Friday, Saturday, Sunday. My legs are sore.

Three Midterms…I have this week. Monday (today), Tuesday, Wednesday. My brain is sore.
