Alright. Because I have an abundance of food photos from the past little while that I have yet to use, and because that’s about all I have to offer right now, here’s a nice little journey through some of the stuff I’ve been eating this month.

And by the way, 99% of what I eat right now is speedy so if you need to know what to eat in a jif, welcome to my appetite. :)

 

Spinach is about the most convenient green I can get. Giant bowls of it with a bit of dressing and you’re good to go. By the way, the big containers of Fontaine Sante Taboulé at Costco = delicioso

Spinach steamed in the micro for 30 seconds is equally as convenient. And even better topped with pasta, preferably if your mother makes it if you’re pressed for time but I know we’re not all quite so spoiled.

Or you could top it with a mixture of pasta sauce and hummus for a pimped out pasta sauce without the pasta.

You could even side it with some Vegan Red Lentil Dal. I was missing a couple spices so I did a quick Google search to figure out what might work as a substitute:

For the 1 tsp cumin – I used 1 tsp chili powder
For the 1 tbsp coriander – I used 1 tbsp dried parsley

I have no idea if these subs were valid or not but the dish did taste a bit overspiced so I’m thinking the cumin and coriander are pretty key, especially since I think they’re pretty regular players in Indian cuisine? Either way it didn’t turn out too badly but I think I’ll have to give it another go once I have the proper spices on hand.

I’ve just started topping some of my salads with plain mustard and I LIKE it. That and random freezer leftovers but that’s nothing new.

As are egg beaters mixed with laughing cow, salsa and spinach atop toasted a english muffin. I used to eat this like…every day? Not surprisingly I got sick of it and I hardly eat them anymore but when I do… thumbs UP.

Roasted vegetable salads aren’t quite as quick (I’m impatient so the 20ish minutes it takes to roast the veggies feels like an eternity sometimes!) but they’re easy peasy:
Spinach topped with roasted broccoli, brussel sprouts and carrots coated in dijon mustard and balsamic vinegar before roasting, all topped with roasted red pepper dip and cottage cheese.

And by the way…sauerkraut? Any fans? I just tried it for the first time this week. It’s okay… I’m not a huge salty food fan (please ignore the cottage cheese above), or I guess more precisely olive fan, and this was kind of reminiscent of shredded olives? I have a lot left though, what do I use it for?

I’m no food saint though. Despite all these veggies I’ve definitely been consuming even more breads and sugar. Doh. FYI – bread rarely gets photographed but it’s abundant in my everyday eating…usually in the form of a giant hunk ripped off a slice and shoved into my mouth while prepping other foods. No one wants to see that spectacle.

But I guarantee you do want to see the spectacle of the other sweeties of my eaties.

I’m a little miffed about my lack of hot breakfasts lately. The temperatures are dipping but hot oats are still only an occasional breakfast guest.

I’m still more into the cold breakfast thing right now.

Maybe not this cold though. This smoothie was the first I’ve had probably since summer. I need to bring them back more though, I miss them. Just as long as I have coffee to pair them with. This baddie>spinach, almond milk, water, stevia, vanilla protein powder, frozen banana, ice, the gums.

I brought back the smoothie once more for dinner. Vanilla protein powder frozen berry smoothie (with mucho gums and ice) in a near empty whipped peanut butter jar with big chunks of chilled roasted squash stirred in. I crave interesting things in the heated midst of intense essay writing.

So when I said cold breakfasts, I was thinking more along the lines of cold cereal. Or more specifically, in this case, crumbled Granola Plank in almond milk (which, by the way, I wasn’t impressed with. It just tasted like a stale rice krispie square to me).

I save the real deal cereal bowls for dinner. Sometimes dinner cereal is the way to go, especially when you have a hungry yet queasy stomach. This was perfect – Puffed rice, Shreddies, frozen berries, banana, almond milk and a hefty sprinkling of chocolate Amazing Grass powder.

And when you’re always looking for quick grab foods, those freezer baking stashes never fail. Avocado Banana Muffin bottom topped with puree of baked sweet potato blended with a splash of almond milk, SF maple syrup, cinnamon and nutmeg.

All that baking I did in my last post… mostly gone now. Despite stashing it in the freezer. Gotta love convenience.

 

I have about a million words to write for papers in the next two weeks so I better get cracking. Our prof in one of my classes just gave us a week extension on our final paper though which is a huge help. I love awesome profs.

Usually in the heat of the term I’m really good at isolating myself from humanity and work work working until I get everything done but for some reason this year things just keep cropping up and pulling me out of the house. What is this social life business?! I can’t handle it!

How do you balance a social life with school/work/the like? Tips, tricks, tools and savvy advice?
Google Calendar is one of my sanity tools :) So is quickly jotting down daily schedules/to-do lists. I do one of these every night before bed for the next day, and then check off what I actually accomplished before writing the next one that night. It doesn’t matter if I don’t get everything done, it just helps keep my brain organized.

I’m a Treadhead – I do most of my running on the treadmill. And by most I mean basically all. The scenery isn’t all that gorgeous but the ground is smooth and the weather is amazingly consistent. I’ve also never been chased by an angry dog, lucky me!

For the past little while though, running suddenly got hard. Much harder than usual. My legs have been way more tired, sluggish and sore than ever before. And I’m not a new member to the Treadhead clan. What gives?

I didn’t get it. Maybe I was somehow suddenly overexerting myself? Maybe I wasn’t stretching as much or as often as I used to? Maybe my legs suddenly decided they just hated running?

Or MAYBE (Hello Genius) it’s those cheap ass $30 runners with zero support, cushioning, or any kind of comfort whatsoever that you picked up at Costco a few months ago just because they were so darn cheap and why not have an extra pair of runners for the heck of it, just in case. Except somehow I managed to transition those “just in case” runners into my regular, everyday runners and have been using them on every single run for the past several months. This  realization only popped into my head a couple days ago. Several months of leg pain and more difficult runs…several months of wearing cheap ass shoes…Coincidence?

Perhaps.

But there’s only one way to find out…

…by taking my brand new (gel cushioned!) Asics runners for (many a) test run!

When I first put these shoes on, it was like I had never experienced running shoes before. I knew my cheap ass runners lacked comfort but wearing these made those seem like they were made out of cardboard.

I don’t know for sure if these are going to magically make my legs feel less stiff and sore like they currently do all the time… but I have a good feeling that I’m going to just FLY on that tready tomorrow. Holla New Shoes! Here’s to much more enjoyable runs to come.

New food try – Pasta Slim.  Kinda like those Shirataki noodle things only slightly less fishy-stenched. Rinse, rinse, rinse.

Mix with marinara, mushrooms, spinach, Frank’s and chili powder. CHOMP. I also suggest cutting the noodles up beforehand, those things are long.

Or you could go the even cheaper mock-pasta route and spaghetti squash it up. Especially if you load it with broccoli, black beans, marinara sauce and feta.

If I’m feeling extra fancy, sometimes I top my salads with firm tofu mashed with a sauce of peanut butter, hoisin sauce and Sriracha (Just look how fancy I can get).

Or if I’m not, then I’ll use some jarred marinara on plain chunks of tofu. Those other white shrively things are roasted kohlrabi ‘fries’. I dig.

More than just sometimes, I often dress my greens in cottage cheese (and honey mustard dressing). But too much cottage cheese did some serious damage to my interiors the other day and now I’m not buying it for a while. Not nice, dairy.

If you’re extra lazy, or rushed, or you just don’t like your greens, you could always drink them. As long as it’s alongside hot and lovely coffee or warm beverage of choice, otherwise you might freeze to death. Hey, it’s Fall, it’s cold out now!

And if you’re still cold from drinking up all of your fruits and vegetables (clearly you didn’t have enough coffee), then you could just make a Deep Dish Veggie Tart for dinner to warm you from the inside out. Or outside in. Or… both I guess?

Your fam might not love it… and you might want to follow the instructions and actually search down that whole wheat pastry flour it calls for rather than settling for regular whole wheat flour so that you’ll end up with a more appropriate crust-like crust…

but I liked it quite a lot. Even though it fell apart and looked like a sludge pile. A very tasty sludge pile.

And speaking of leftovers… I have some of those homework-style leftovers to attend to before hitting the hay. Though I may have to save those for tomorrow’s meal. I’m kinda stuffed right now.

 

How often do you replace your runners? Do you invest in a good pair or just grab a pair of cheapies? – Don’t! Seriously, those things will kill your legs.

Thanks for the Balance. feedback It’s good to know I’m not alone in feeling out of whack and all over the place sometimes. Sometimes you just sit there and wonder, “Am I going crazy?”, you know? But life is like that, it moves flows and dips and stands still and changes and keeps on keeping on and all the while you have to shift and adjust to keep up with all of this. All of your views on keeping balance are so darn smart :)

 

One thing in particular,  brought up by Melissa, that I haven’t thought about much lately is Happy Goals. I’ve never been very strong at goal setting (I think a large part of that is that whole fear of failure deal) and I don’t often make them. When I have set them the past, they really do help me to be diligent at working towards what it is that I’m aiming for, but I have a hard time setting them in the first place:
A) Half the time I can’t think of what goals I want to set. A silly reason as goals can be anything but I have trouble with this a lot of the time.
B) Failure fear. If I don’t try, I can’t fail. Horrible mentality. Need to kick that one to the curb asap.
C) Because it’s not something I’ve done regularly, I don’t even think about goal setting 90% of the time. I forget to do it and I forget how helpful it is. I guess I need to write myself reminders – SET GOALS.

So in conclusion? I think I need some goals. I think I need things to work towards. It’s hard to think about what you want to accomplish when you are stuck and rutted and really don’t have a clue what you want. But a new month is coming, and a new school year is coming, and thus the perfect conditions are a brewin’ for some new goals (no matter how big or small) to be set.

I can’t be contemplative and brooding all the time though, it’s tiring! So let’s take a look at what else has been going on in my household over the past few days.

 

Got rhubarb? We did. Well then what else is there to do than make Strawberry Rhubarb Bars?

Actually there was probably many other things I could have done. I also made rhubarb sauce (just rhubarb, sugar and water boiled down) with the leftover rhubarb which was stellar. Much moreso than this dish, which was slightly disappointing. It was good…ish. But not nearly as good as I thought it would be. Not one for the recipe binder anyway.

 

And since granola has now become a necessity in this household since my mom is now loving it (much to my despair… move over Cookie Monster, here here the GRANOLA Monster has been born… I can’t keep away from it!) a fresh batch was born this weekend.

Cherry Almond Granola -became —> Cranberry Raisin Peanut Granola 

I used dried cranberries, raisins, chopped peanuts, pumpkin seeds, sunflower seeds, a few chopped cashews and a few pine nuts. I used safflower oil and everything else stayed the same.

We should probably also talk about this 5 Minute Blueberry Banana “Ice Cream” I stumbled upon and just had to make this morning. I only had a wee bit of cottage cheese left and bloobs that were unfrozen, but this was still pretty bomb. Why have I never blended cottage cheese and frozen banana before? Genius!

Still on the topic of blended treats, what do you do when you have a huge badonk watermelon cut up in a container in your fridge that’s swimming in a pool of hunky chunky watermelon juice?

You freeze the juice. Later on you slightly defrost said juice, throw the now slush into a blender along with a splash of almond milk, a splash of lime juice and a dash of vanilla protein powder and you soon will have birthed a crazy refreshing watermelon delight. Topped with homemade granola of course.

I have this habit of eating cold chunks of banana straight out of the fridge dipped in peanut butter. It’s amaze. So instead of just eating it mindlessly as per usual I thought I’d just turn it into breakfast.

Vegan? No I be not (note the ground beef above…) but I do like me some vegan cookbooks and when I found a recipe for Breakfast Veggie Chorizo using TVP, I knew I had to make it immediately.

I’ve had a bag of unopened TVP in the cupboard for ages. I never knew what to do with it, had never ever tried it and frankly, I just ended up forgetting about it. So glad the Veggie Chorizo recipe revived my memory. The main players are onion, a variety of spices (many of which I didn’t have, hello improvision), TVP and tomato paste.

My first bite of TVP was… weird. But weird as in interesting, intriguing, give me a few more bites and a few more and wow this stuff is pretty awesome! And then my mom tried it… and loved it! Literally she sat there eating it while exclaiming “I love this!” with a slightly shocked yet overjoyed expression. Who would have thought, my mom loving some crazy faux meat substitute. Fist pump!

Vegan with a Vengeance is clearly a winner. Now which recipe shall I try next??

New lenses! Cha ching! (?)

I’m not blind so I usually either don’t wear anything at all or wear contacts if I think I’m going to need to actually see stuff (Like in lectures. Or at the bar…). I use glasses once in a while but mine were 6 years old. Just a tad outdated.

Now that I got my new shades (without the shade…) clearly I’m soon to become a true braniac. I forsee my IQ jumping 30 pts within a week’s worth of wear.

Though as much as I support melon mornings, I will admit than I am not a fully loyal member to the club and therefore do stray on the regular.

This morning I strayed into Smoothie Land with a Strawberry Chocolate Coffee Smoothie.

All measurements very approximate. Because all I ever do is throw random amounts into the blender.

  • 1/2 cup coffee, splash skim milk, splash almond milk, handful fresh strawberries, handful frozen strawberries, tbsp cocoa powder, 1/2 scoop chocolate protein powder, packet Stevia, 1/2 tsp xanthan and guar, mucho ICE.

And a couple days ago I strayed on over into the Baked Breakfast Club with a loaf of Blueberry (Strawberry) Banana Bread from Fat Free Vegan Kitchen.

How I do:

3 (very) large over-ripe bananas
2 tablespoons lemon juice
1/3 cup (80 ml) vanilla soymilk (or apple sauce)
2 tbsp (120 ml) agave nectar maple syrup
1/3 cup brown sugar
splash chocolate almond milk (maybe 2-3 tbsp?)

2 cups (240 g) white whole wheat flour (or regular whole wheat flour)
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup (240 ml) blueberries
~1/2 cup chopped strawberries

Baked at 350 for 50 minutes in a greased loaf pan.

No eggs, butter, oil…yet LOOK at the moistness. I didn’t fully mash my banana either so there were plenty of lovely mushy banana chunks. Mmm.

I probably could have cooked it a wee bit longer but I dig the goo so if you make it and aren’t down with the doughy, leave it in longer.
