Savoury Oat Stuffed Acorn Squash

I made this for the first time here.

Cook up the oats up first, stove-top style:
* 1/4 cup oats
* Water
* Seasonings: garlic powder, oregano, chili powder, pepper… whatever I saw in the cupboard basically
* A splash of Hot Sauce
* Spinach

While the oats are cooking, microwave half of a prebaked acorn squash for a few minutes until warm.

Once the oats are done, stir in some salsa and a slice of fat free swiss cheese (or cottage cheese, laughing cow…whatever floats your boat) then turn the stove off, put the lid on the pot and let the cheese melt into the oats.

Spoon the oat mixture into the squash and eat up!
